Dotonbori ・ Shoyu Ramen (Cabbage-Topped)

Kamukura, Dotonbori Main Store: Osaka-Born Cabbage-Topped Ramen

This Dotonbori shop is the original Kamukura location, opened in July 1986 as a 9-seat, 4-tsubo storefront by a founder who came from a French-cooking background rather than a ramen one -- a detail that shows in the shop's light, French-influenced take on shoyu broth rather than a more typical miso or tonkotsu base. The signature bowl piles a generous mound of lightly cooked cabbage on top, a contrast to the tonkotsu ramen more commonly found elsewhere in the city. The chain has since grown to roughly 130 locations in Japan and abroad, but this original Dotonbori storefront remains open nearly around the clock.
