Izuju: Century-Old Saba-zushi Beside Yasaka Shrine

Izuju was founded in the early 1900s by a craftsman who trained at Izuu before opening his own shop right beside Yasaka Shrine; it remains an independently run Gion institution for saba-zushi and other Kyo-zushi more than a century later.
